NO MOLD Project – Integrated Approach to Combat Mold and Mycotoxins in Grains and Bakery Products.

The project aims to establish an integrated process for combating molds and their secondary products (mycotoxins) as an alternative to the use of chemical additives within the food matrix.
The activities will be carried out on a dual front, upstream and downstream of the agri-food supply chains. Upstream of the supply chain, the fight against mycotoxins in grains will involve the development of a system for decontaminating products intended for both human and animal consumption. Downstream activities in the supply chain aim to replace the use of traditional antimicrobial preservatives in the food industry with natural, safe, and ethically sourced ingredients for consumers.
These ingredients will be incorporated into the packaging to release during the product’s shelf-life.
